Chili con Carne

Rich in proteins and fibers, beans are one of the most popular ingredients in our kitchen nowadays. Patience is the main secret for cooking them properly. 

Best results are achieved if they are cooked at a low temperature for a long period of time. 

With time on our hands, the possibilities are endless.
Their broad variety makes beans the main ingredient for many traditional dishes and also the guest-star for top Michelin Chefs.

Let’s see what we can do with cooked beans!

We have One recipe that will expand into three other recipes.
One part will be dedicated to a vegan baked beans recipe, the second part for the famous chili con carne and last but not least, a delicious English breakfast!

We start with a plant-only based recipe that is a wonderful main course for people embracing a vegan lifestyle, people fasting or people who enjoy a dish full of proteins, fibers and flavor.

The basic recipe combines white beans with homegrown Borlotti beans.
As per our grandmother’s advice, Tarragon and Bay leaves are used for seasoning, enhancing the flavor of the beans.

Chili con carne, the famous Mexican dish, is a spicy stew prepared with beans, tomatoes, minced meat and of course the chili!
Quick to make and rich in flavor, this is perfect for the cold autumn and winter days.  
Canned kidney beans were added to acquire the so specific taste.

Seasoning with intense dark chocolate, it will spoil your tasting buds. 

Should be served hot, with yogurt or creme-fraiche, seconded by a generous portion of Basmati rice. 

The last recipe is the delicious English breakfast beans
It’s always good to try something new, by cooking your own delicious beans.

These beans are so popular in the UK and Ireland, that many pubs offer them as an >all-day< breakfast.

Add two sausages, two bacon strips, two fried eggs, cheddar cheese, two baked half-tomatoes, plenty of pan-fried mushrooms, and two toast slices, to start your day full of energy.

Baked Beans (main ingredient)

 500 g beans
 200 g tomatoes
 1 onion
 2 carrots
 200 ml tomatoes juice (smashed tomatoes)
 1 tsp tarragon leaves
 6 bay leaves
 

Chili con Carne

 100 g beans (from main recipe above)
 100 g red beans
 500 g minced beef meat
 1 onion
 200 g tomatoes
 150 ml tomatoes juice (smashed tomato juice)
 100 g smashed paprika (salsa)
 ½ tsp thyme
 ½ tsp caraway
 25 g dark chocolate (min. 70% cocoa)
 1 chili (smashed)
 1 pinch of salt

Baked beans (main recipe)

Step 1: - boil the beans. Once the beans start to boil, replace the water and start boiling again. Repeat this process 3 times. This will reduce the beans after effects, if you know what I mean 🙂
Once the beans are boiled don't throw the water. We will use the water later in the process.

Step 2: - chop the carrots into small pieces

Step 3: - chop the onions into small pieces. Chop both onions so that you have them ready for Chili con Carne as well.

Step 4: - Get a pan that fits 500 grams of beans plus the tomatoes, tomato juice, carrots and the onion.

Start with frying one onion and the garlic using 2 tablespoons of oil. Fry them for about 3 minutes until the onion changes colour a bit.

Step 5: - add the carrots and fry for 2 more minutes. Keep stirring the mix.

Step 6: - add the beans to the mix and keep mixing.

Step 6: - after 2-3 minutes add the tomatoes, the tomato juice and keep mixing

Step 7: - add the condiments (tarragon, bay leaves, pepper and salt) and keep mixing

Step 8: - add the water used the 3rd time during beans boiling process. Keep steering and frying.

Step 9: - before moving to the next step, we will save some beans for Chili con Carne

Step 10: - now we'll be moving to the oven area. Let's put some oil in a cooking plate, spread it so it covers the bottom and the sides

Step 11: - add some bay leaves

Step 12: - transfer the beans from the frying pan to the pan that we will use to put the mix in the oven

Step 13: - put the mix in the oven at 160 degrees Celsius (320 Fahrenheit)

Step 14: - now we have baked beans that can be served as they are fresh out of the oven with pickles for example.
We can stop here, or we can do something even better with the beans.

Chili con Carne

Step 1 (b): - put 2 tablespoons of oil in a frying pan. Use a frying pan big enough for the 500g of beef meat.

Step 2 (b): - put the second chopped onion into the frying pan. Fry the onions until they start changing the colour.

Step 3 (b): - add the beef meat and continue to fry.
