Fudgy brownie

I bet you want to know the best fudgy brownie recipe.

This is neither for diet, nor for people counting calories.

The journey towards a delicious brownie starts as you have guest it, with dark chocolate, the darker the richer and fudgier the brownie will turn out. It’s a slow process, but it’s a very rewarding process. 

The trip to perfection of our brownie starts by melting the most intense chocolate (min. 70% cocoa) into a creamy fat butter. 

Remember: The darker the chocolate the richer and fudgier your brownies will be. 

The process should be slow, but luckily you can  savour each bite of the melted chocolate. 

After  the chocolate is fully melted, place it in a cool place for a few minutes or until it gets around the room temperature, to avoid ruining the eggs during the mixing phase.

Mix the brown and white sugar with the fresh eggs. 

Keep in mind: the eggs need to be added one by one with a good mixing in between. We recommend making sure the sugar is completely dissolved before moving to the next step. 

Important Trick: Although it requires a bit of effort, to get a crispy top on your brownies, make sure you mix the sugar well with the eggs, until they are light and frothy. 

The type of sugar has a great influence on the brownie texture. 

The brown sugar brings moisture and the white sugar makes it crispy. 

The best is to get benefits from both, so mix them always for the perfect brownie.

To intensify the chocolate taste add some salt. Salt brings out the flavour whilst balancing out sweetness.

Mix the cocoa with flour. 

If you are preparing this brownie during winter time, we recommend also to add some cinnamon, nutmeg and smashed cardamom.

Accompanied by a cup of warm milk is a dream when outside during the frozen winter nights.

Start pouring the cocoa mixture into the     eggs and sugar blend      and mix well. 

Continue the process until you incorporate them well.

It will get more and more stiff, but stay strong and don’t give up. It is totally worth it!

And last but not least, add the    cooled chocolate      into the mixture. 

The flavor is irresistible, but we are just one step from finishing.

You should always line your baking tray with baking paper, a bit greased as it will make the brownie easier to be removed after backing. 

Bake it for 30 min at 180 degrees Celsius. 

Keep this recommendation in mind since brownies are sensitive creatures. 

Three minutes more can completely change the texture.

Let the brownie cool and then slice it into pieces..

It should be crunchy and dense with a crispy top.

Melt the chocolate into the butter.After melting it, make sure to place it in a cool place.

Mix the brown sugar, white sugar and add the eggs one by one.
Take care of mixing patiently after each egg added and also to blend until the sugar is completely solved into the egg mixture.
Optionally one can also add some vanilla essence for more flavor.

Step 3
Add the salt and mix well.

Step 4
Mix the flour, cocoa, cinnamon, cardamom, nutmeg in another bowl.

Step 5
Add the cocoa mixture into the eggs mixture step by step while continuously blending.

Step 6
After incorporating all the cocoa mixture add the melted chocolate cooled. Mix well to make sure the chocolate is very well incorporated.

Step 7
Place the mixture into a lid. Bake for 30 min at 180 degrees celsius.
Make sure the oven is preheated.

Step 8
Wait until the fudgy brownie is completely cool.
Cut in generous pieces and serve it with fruits, jam, cream, vanilla ice cream or even more cocoa cream.
