Syrniki (or tvorozhniki) pancakes is one of those recipes. The eastern Slavic pancakes are a delight in Moldavian, Russian, Ukrainian, Latvian, Belarusian and Serbian cuisine!

These cheesy pancakes are crispy on the outside, creamy and fluffy on the inside and ready in just 5 minutes!!

Syrniki (Сырники) pancakes are served warm with cream, marmelade, chocolate, nuts, fresh fruits and caramel.

 400 g quark cheese
 2 eggs
 8 g vanilla sugar
 ¼ tsp salt
 1 cup (150g) flour
 100 g sugar (1/2 cup)
 5 g baking powder (1/2 envelope)
 === For the chocolate cream ===
 50 g butter
 60 ml milk
 30 g cocoa (1/4 cup)
 100 g sugar (half cup)

Step 1: - put the quark cheese in a bowl and add the eggs

Step 2: - add vanilla sugar and normal sugar to the mix (from step 1)

Step 3: - start mixing the ingredients from step1+2

Step 4: - start adding flour but slowly and continue mixing. Once the flour is mixed, add some more flour. I recommend that you use a table spoon to add flour. In this way the quantities of flour are small.

Step 5: - add a pinch of salt to the mix and continue mixing

Step 6: - add grated lemon (from one lemon)

Step 7: - put flour on a flat plate

Step 8: - put one spoon of mixture content in the flour (from step 7)

Step 9: - roll the mixture on the flour

Step 10: - now pick up the mix from the flour and using both hands, start making a sphere

Step 11: - after you managed to get a sphere, put the sphere back on the flour and using your hand press it. You should now have a flat rounded pancake (uncooked).

Step 12: - make 3-4 round dough and then put them in a frying pan. Make sure you flip them regularly or else they will burn.

Step 13: - once they are cooked, you can fill them with marmalade, chocolate cream, or any other filling that you can think of :). Sky is the limit but don't overdo it!!
You can also eat them without any filling.

Step 1: - melt the butter

Step 4: - and keep mixing until everything becomes a chocolate cream
